This is a very, very different kind of omelet than what you might be used to... but just wait! One bite of Noodle Omelet and you'll be convinced this is how omelets should be done. The tender ramen noodles add body and satisfaction to the fluffy eggs, making them taste even more nourishing! Savory soy sauce and tangy vinegar add a depth of flavor you wouldn't expect from your eggs! Noodle Omelet is an easy and delicious meal that can be made in a hurry!
Ingredients
- 1 (3-ounce) package ramen noodles, flavor packet reserved for separate use or discarded
- 2 eggs
- 3 teaspoons soy sauce
- 1 teaspoon white vinegar
- chili flakes, to taste
- salt, to taste
- black pepper, to taste
- 1 teaspoon peanut oil
- 1 green onion, optional, chopped, for garnish
Directions
Step 1 -In a pot of boiling water, add the ramen noodles and cook them according to the package directions.
Step 2 -In a bowl, add the eggs, the soy sauce, the vinegar, the chili flakes, the salt, and the black pepper and whisk to combine.
Step 3 -In a pan over medium-low heat, add the oil.
Step 4 -Drain the noodles and add them to the egg mixture.
Step 5 -Add the egg mixture to the hot oil and cook, flipping it once, until the eggs are fully set, about 3 minutes per side.
Step 6 -Serve garnished with the green onions.
