Hearty Steak Salad truly brings the steakhouse to you. Hooray! The steaks are rosy on the inside, fabulously grilled on the outside, and savory all the way through. And there they are, perched pretty atop a bed of spring greens with crunchy pepitas for texture. The tangy, creamy blue cheese dressing, made from scratch, just adds to that steakhouse luxury, doesn't it? Hearty Steak Salad is more than just hearty, it's incredible!
Ingredients
- For the salad:
- 2 (6-8-ounce) filets, can substitute New York strip
- 12 ounces spring greens
- kosher salt, to taste
- black pepper, to taste
- 1 cup cherry tomatoes, quartered
- 2 baby cucumbers, chopped
- pickled red onions, to taste, store-bought or homemade
- 1 avocado, thinly sliced
- 3 tablespoons pepitas, roasted
- For the blue cheese vinaigrette:
- 3 tablespoons white wine vinegar
- 1 clove garlic, minced
- 1 tablespoon chives, chopped
- 1 tablespoon fresh dill
- 1 teaspoon honey
- 1 teaspoon Dijon mustard
- salt, to taste
- black pepper, to taste
- 1/2 cup olive oil
- 4 tablespoons blue cheese, crumbled
Directions
Step 1 -Preheat the grill to the highest setting.
Step 2 -Let the steak come to room temperature for 30 minutes.
Step 3 -In a large bowl, add the greens, the salt, and the pepper and toss to combine.
Step 4 -Add the tomatoes, the cucumbers, and the pickled red onions to the salad bowl.
Step 5 -Season the steaks with the salt and the pepper.
Step 6 -Add the steaks to the grill and cook until they reach an internal temperature of 135 degrees F for medium rare, about 4-5 minutes per side.
Step 7 -Let the steaks rest for 10-15 minutes.
Step 8 -Slice the steaks against the grain.
Step 9 -Add the avocado and the sliced steak strips to the salad.
Step 10 -Sprinkle the pepitas over the salad.
Step 11 -In a bowl, add the vinegar, the garlic, the chives, the dill, the honey, and the Dijon mustard, the salt, and the pepper and whisk to combine.
Step 12 -Slowly stream the oil into the vinegar mixture, while whisking, until smooth and emulsified.
Step 13 -Add the blue cheese crumbles to the dressing and stir to combine.
Step 14 -Serve the salad dressed with the blue cheese vinaigrette.
