From the gal who likes to play Rummy with her card-playing girls as much as she likes to drink rum with her vacay-going girls, it wasn't a huge surprise to us when our beloved grandmother showed up to our family potluck with what she called Granny's Rum Baked Beans. Loaded up with five kinds of beans, the sweet and tangy sauce it's soaked in is infused with... you guessed it! Rum! She claims it adds a blast of fun and lots of flavor, just like her. Goodness gracious, she is something else. So, when you're looking for some fun and flavor, Granny's Rum Baked Beans have you covered!
Ingredients
- 6 slices bacon, thick-cut, chopped
- 1 cup sweet onion, chopped
- 2 cloves garlic, minced
- 1 (28-ounce) can baked beans with bacon and brown sugar, such as Bush's® Original Baked Beans
- 1 (16-ounce) can navy beans, drained and rinsed
- 1 (16-ounce) can dark red kidney beans, drained and rinsed
- 1 (16-ounce) can light red kidney beans, drained and rinsed
- 1 (15-ounce) can black beans, drained and rinsed
- 1/2 cup dark brown sugar, packed
- 1/2 cup ketchup
- 1/2 cup gold rum, such as Bacardi® Gold
- 1/4 cup apple cider vinegar
Directions
Step 1 -Preheat the oven to 350 degrees F.
Step 2 -Lightly grease a 9x13-inch baking dish.
Step 3 -In a large skillet over medium heat, cook the bacon pieces until they are crisp.
Step 4 -Transfer the bacon pieces to a large bowl. Reserve 2 tablespoons of the bacon drippings in the skillet and drain the rest.
Step 5 -Add the onions to the bacon drippings and cook, stirring frequently, until they are tender, about 5 minutes.
Step 6 -Add the garlic to the onions and cook, about 1 minute.
Step 7 -Add the onion mixture, the baked beans with their liquid, the navy beans, the dark red kidney beans, the light red kidney beans, the black beans, the brown sugar, the ketchup, the gold rum, and the apple cider vinegar to the bacon pieces and stir until it is combined.
Step 8 -Spoon the baked bean mixture into the prepared baking dish and cover the baking dish with foil.
Step 9 -Bake the baked bean mixture, about 30 minutes.
Step 10 -Discard the foil and bake the baked bean mixture, about 30 minutes.
Step 11 -Serve.
