Deliciously seasoned chicken cubes are submerged in an enchantingly cheesy, sour cream-based sauce, along with tender rotini pasta and loads of melted cheese to make those who are the most skeptical believe that this is one supernatural dish! Abracadabra! Cheesy Chicken Rotini pulls out all the stops and is enjoyed by young and old. Conjure all the good things and pull a delicious dinner out of your hat in no time, with this trick of the (pasta) trade. No surprises, hocus pocus, or deceptions here... voilà! All your Houdinis will love this pasta dish!
Ingredients
- 1 (16-ounce) box rotini pasta
- 3 large chicken breasts, boneless and skinless, cut into 1-inch cubes
- 1/4 teaspoon ground black pepper
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- 1/4 teaspoon salt
- 1/8 teaspoon ground cayenne pepper
- 2 (10.5-ounce) cans condensed cream of mushroom soup
- 1 cup chicken broth
- 1 cup sour cream
- 2 cups cheddar cheese, shredded, divided
- fresh parsley leaves, to taste, for garnish
Directions
Step 1 -Coat a Dutch oven with nonstick cooking spray.
Step 2 -In a large pot of salted, boiling water, cook the rotini to al dente, according to the package directions.
Step 3 -Drain the water and return the rotini to the pot.
Step 4 -Season the chicken cubes with the black pepper, the garlic powder, the onion powder, the salt, and the cayenne pepper.
Step 5 -Add the seasoned chicken cubes to the Dutch oven and cook over medium-high heat, stirring frequently, until they reach an internal temperature of 165 degrees F, about 5-6 minutes.
Step 6 -Add the cooked rotini pasta, the cream of mushroom soup, the chicken broth, the sour cream, and 1 1/2 cups of the cheddar cheese to the chicken mixture and stir to combine.
Step 7 -Sprinkle the remaining cheddar cheese over the pasta mixture. Cover the Dutch oven and simmer until the pasta mixture is heated through and the cheese on top has melted, about 5-8 minutes.
Step 8 -Garnish the pasta mixture with the parsley and serve.
