Ingredients

  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 1 medium green bell pepper, diced
  • 2 medium russet potatoes, diced into 1/2-inch cubes
  • 3/4 teaspoon salt, divided
  • 3/4 teaspoon ground black pepper, divided
  • 6 large eggs
  • 1/2 cup cheddar cheese, optional, shredded

Directions

Step 1 -Preheat the oven to 350 degrees F.

Step 2 -Lightly grease a 9-inch square casserole dish.

Step 3 -In a large skillet over medium heat, heat the olive oil.

Step 4 -Add the onions to the hot oil and sauté for 1 minute.

Step 5 -Add the green peppers, the potatoes, 1/2 teaspoon of the salt, and 1/2 teaspoon of the black pepper and sauté, while stirring, until the onions are soft and tender, about 4 minutes.

Step 6 -Transfer the vegetable mixture to the prepared casserole dish, spreading it out evenly.

Step 7 -In a medium mixing bowl, add the eggs, the remaining salt, and the remaining pepper and beat to combine.

Step 8 -Pour the egg mixture evenly over the vegetables in the casserole dish.

Step 9 -Sprinkle the cheddar cheese on top of the casserole dish.

Step 10 -Bake until the eggs are cooked firmly, about 35-40 minutes.

Step 11 -Serve.
