It's about time you show that someone special just how much they mean to you. Make them up a plate of this Olive-You Pasta. Don't worry, they will get the message. Just like love, this dish carries with it a range of sensations and flavors, from the tangy namesake olives, to the sharp parmesan, to the rich tomato sauce with herbaceous notes. It's a message as complex yet simple, just like a declaration of love can be. You'll be in love with serving Olive-You Pasta to your loved one!
Ingredients
- 2 large onions, chopped
- 6 tablespoons olive oil
- 3 cloves garlic, minced
- 3 pounds plum tomatoes, seeded and chopped
- 1 cup vegetable or chicken broth
- 1 tablespoon dried basil
- 1 teaspoon crushed red pepper flakes
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1 (16-ounce) package penne pasta
- 1 (24-ounce) block Havarti cheese, cut into 1/2-inch cubes
- 1 cup Greek olives, pitted
- 1/3 cup parmesan cheese, grated
Directions
Step 1 -Grease a 9x13-inch baking dish.
Step 2 -In a Dutch oven over medium-high heat, sauté the onions in the oil until tender.
Step 3 -Add the garlic to the onions and cook until fragrant, about 1 minute.
Step 4 -Stir the tomatoes, the broth, the basil, the pepper flakes, the salt, and the pepper into the onions and bring to a boil.
Step 5 -Reduce the heat and simmer, covered, until the sauce slightly thickens, about 25-30 minutes.
Step 6 -Preheat the oven to 375 degrees F.
Step 7 -In a separate pot, cook the penne to al dente, according to the package instructions and drain.
Step 8 -Stir the Havarti cheese, the olives, and the cooked penne into the sauce.
Step 9 -Add the pasta mixture to the prepared baking dish.
Step 10 -Sprinkle the pasta with the parmesan cheese.
Step 11 -Cover and bake the pasta for 20 minutes.
Step 12 -Uncover and bake until the cheese is melted, about 5 minutes.
Step 13 -Serve.
