Some things are simply priceless! Million Dollar Shrimp is worth its weight in hushpuppies because it's just that good! So easy and so delicious! Plump butterflied shrimp coated with some Cajun-seasoned breading and fried until golden-brown make for a one-in-a-million exceptional taste. Million Dollar Shrimp is on the money with the perfect zesty Cajun flare you crave. Sorry, hushpuppies are optional.
Ingredients
- 2 cups whole milk
- 1 large egg
- 1 tablespoon yellow mustard, optional
- 1 teaspoon plus 1 tablespoon Cajun seasoning, divided
- 3 pounds large shrimp, raw, peeled and deveined, butterflied and tails intact
- 1 (12-ounce) package fish fry seafood breading mix, can subsitute 2 cups finely ground cornmeal or self-rising flour, seasoned with salt and black pepper, plus other spices, optional, such as cayenne pepper, to taste
- peanut oil, to taste, can substitute canola or vegetable oil
- dipping sauce, optional, to taste, of your choice, for serving
- fresh parsley, optional, to taste, chopped, for garnish
Directions
Step 1 -In a large bowl, add the milk, the egg, the mustard, and 1 teaspoon of the Cajun seasoning and whisk to combine.
Step 2 -Carefully add the butterflied shrimp into the milk mixture.
Step 3 -Cover the bowl and transfer it to the refrigerator to marinate for at least 15 minutes and up to 1 hour.
Step 4 -In a large shallow dish, add the remaining Cajun seasoning and the fish fry mix and stir to combine.
Step 5 -Transfer the marinated shrimp from the milk mixture and completely dredge them in the fish fry mixture, shaking off any excess.
Step 6 -In a single layer, place the coated shrimp onto two (18x26-inch) baking sheets.
Step 7 -In a Dutch oven or deep-sided pot, add about 3-inches of the peanut oil and heat it to 325 degrees F.
Step 8 -On a flat surface, add paper towels or brown paper with wire racks on top.
Step 9 -In small batches, add the coated shrimp to the oil, careful not to crowd them, and cook, flipping them once, until they are golden-brown and cooked through with the shrimp reaching an internal temperature of 145 degrees F, about 1 minute-1 minute 30 seconds per side.
Step 10 -Transfer the cooked shrimp to the wire racks and let them drain.
Step 11 -Repeat the frying process until all of the coated shrimp are cooked.
Step 12 -Serve the shrimp hot, paired with the dipping sauce and garnished with the parsley.
