What happens when you pair the sweet flavor of mahi-mahi with the fragrant savoriness of garlic? Garlic Mahi-Mahi is a speedy and scrumptious seafood dish that will shake up your weeknights! The fish is flaky and tender, the sauce is zesty, herby, and bright, and the sautéed asparagus is crunchy and fresh. Garlic Mahi-Mahi invokes enjoying dinner by the shore even if you're landlocked! Grab some white wine and enjoy the summer sun with this dish!
Ingredients
- 3 tablespoons butter, divided
- 2 tablespoons extra-virgin olive oil, divided
- 4 (4-ounce) mahi-mahi fillets
- kosher salt, to taste
- freshly ground black pepper, to taste
- 1 pound asparagus, woody ends trimmed
- 3 cloves garlic, minced
- 1/4 teaspoon crushed red pepper flakes
- 1 lemon, zested and juiced, plus 1 lemon, sliced
- 1 tablespoon parsley, freshly chopped, plus more, to taste, for garnish
Directions
Step 1 -In a large skillet over medium heat, melt 1 tablespoon of the butter and 1 tablespoon of the olive oil.
Step 2 -Add the mahi-mahi.
Step 3 -Season with the salt and the pepper.
Step 4 -Cook until the mahi-mahi is golden and cooked through at 145 degrees F internally, about 4-5 minutes per side.
Step 5 -Transfer the mahi-mahi to a plate.
Step 6 -Add the remaining olive oil to the skillet.
Step 7 -Add the asparagus and cook until tender, about 2-4 minutes.
Step 8 -Season the asparagus with the salt and the pepper.
Step 9 -Transfer the asparagus to a plate.
Step 10 -Add the remaining butter to the skillet.
Step 11 -Once the butter is melted, add the garlic and the red pepper flakes and cook until fragrant, about 1 minute.
Step 12 -Stir the lemon zest, the lemon juice, the lemon slices, and 1 tablespoon of the parsley into the garlic-red chili flakes mixture.
Step 13 -Remove the skillet from the heat.
Step 14 -Return the mahi-mahi and the asparagus to the skillet and spoon the sauce over them.
Step 15 -Garnish with the extra parsley.
Step 16 -Serve.
