Fiesta Lasagna brings the food fusion to the dinner table that you didn't know you needed! And hey, you'll sure be glad you found it. This layer upon layer of Tex-Mex tastiness swaps out the noodles for some tortillas that are packed full of all your favorite taco night flavors. It's cheesy, it's hearty, and it's fun! Switch things up with the Fiesta Lasagna! The party is coming to your kitchen!
Ingredients
- For the taco lasagna:
- 2 pounds ground beef
- 1/2 white onion, diced
- 1 (1-ounce) packet taco seasoning
- 1 cup salsa
- 1 (15-ounce) can black beans, rinsed and drained
- 2 (10-ounce) cans diced tomatoes with green chilies
- 12 flour tortillas, fajita-sized
- 3 cups Mexican-blend cheese, shredded
- 1 (15-ounce) can refried beans
- Optional toppings:
- avocado, to taste, diced
- cilantro, to taste, chopped
- grape tomatoes, to taste, diced
- radishes, to taste, chopped
Directions
Step 1 -Preheat the oven to 350 degrees F.
Step 2 -Coat a 9x13-inch baking dish with nonstick cooking spray.
Step 3 -In a large skillet, add the beef and cook, while crumbling, until it is no longer pink. Drain the excess grease.
Step 4 -Stir the onions into the cooked beef and cook over medium heat until the onions are soft, about 2 minutes.
Step 5 -Stir the taco seasoning and the salsa into the beef mixture and cook until it begins to simmer, about 2-3 minutes.
Step 6 -Add the black beans and the diced tomatoes with green chilies and their juices to the beef mixture and cook, stirring occasionally, about 5-7 minutes.
Step 7 -Evenly lay 4 of the tortillas on the bottom of the prepared baking dish, then evenly spoon 1/2 of the beef mixture on top. Evenly sprinkle with 1 cup of the cheese.
Step 8 -Evenly lay 4 of the remaining tortillas on top of the cheese layer, then evenly top with the refried beans, the remaining beef mixture, and 1 cup of the remaining cheese.
Step 9 -Evenly lay the remaining tortillas on top of the cheese layer, then evenly sprinkle with the remaining cheese.
Step 10 -Bake until it is heated through and the cheese is melted, about 20-25 minutes.
Step 11 -Serve garnished with your favorite toppings.
