Diner-Girl Home Fries are just the classic potato side you need to make your morning complete. Fluffy, almost creamy bites of potato with bright bits of green pepper and savory onion, delicately seasoned and then simply roasted. No fussing about with Diner-Girl Home Fries; they're ready when you are!
Ingredients
- 2 1/2 pounds red potatoes
- 3 tablespoons extra-virgin olive oil
- 1 green bell pepper, chopped
- 1 medium onion, chopped
- 1 tablespoon steak seasoning
- 2 teaspoons sweet paprika
Directions
Step 1 -Preheat the oven to 450 degrees F.
Step 2 -Cut the potatoes into quarters.
Step 3 -On a nonstick cookie sheet, add the potatoes, the olive oil, the bell peppers, the onions, the steak seasoning, and the sweet paprika and toss to combine and coat.
Step 4 -Bake the potatoes, turning them twice, until the potatoes are cooked through, about 22-25 minutes.
Step 5 -Serve hot.
