Ingredients
- 1 (16-ounce) package whole-grain penne pasta
- 2 tablespoons butter
- 1 cup mushrooms, sliced
- 2 cloves garlic, minced
- 2 cups chicken broth
- 2 teaspoons cornstarch
- 2/3 cup heavy cream
- 3 Meyer lemons, zested and juiced, divided
- salt, to taste
- black pepper, to taste
- 1 small bunch basil leaves, thinly sliced
Directions
Step 1 -In a large pot of salted, boiling water, cook the penne pasta to al dente, according to the package directions. Drain the pasta.
Step 2 -While the penne pasta is cooking, in a large skillet over medium-high heat, melt the butter.
Step 3 -Add the mushrooms and the garlic to the melted butter and sauté, about 1 minute.
Step 4 -In a medium bowl, add the chicken broth and the cornstarch and mix well.
Step 5 -Add the chicken broth mixture to the mushroom mixture, bring to a boil, and cook, stirring constantly, until it thickens, about 1 minute.
Step 6 -Transfer the sauce mixture away from the heat.
Step 7 -Add the heavy cream, the lemon juice, the salt, and the black pepper to the broth mixture and mix well.
Step 8 -Add the cooked pasta and the basil to the sauce and toss to coat.
Step 9 -Plate and serve.
