Ingredients
- 2 1/2 cups low-sodium chicken broth
- 1 1/2 cups orzo pasta
- 1/4 cup oil-packed sun-dried tomatoes, drained and sliced
- 2 cloves garlic, finely minced
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 cups fresh spinach, roughly chopped
- 1/2 cup heavy cream
- 1/4 cup parmesan cheese, shredded
- fresh parsley leaves, to taste, for garnish
Directions
Step 1 -In a medium skillet, add the broth, the orzo, the sun-dried tomatoes, the garlic, the salt, and the black pepper and stir to combine.
Step 2 -Place the skillet over medium-high heat and bring the orzo mixture to a boil.
Step 3 -Reduce the heat to medium-low and simmer the orzo mixture, while stirring often, until most of the liquid is absorbed and the orzo is tender, about 8-10 minutes.
Step 4 -Add the spinach, the heavy cream, and the parmesan cheese and stir to combine.
Step 5 -Garnish with the parsley leaves and serve.
